help - i need tomato recipes.

My friends Dave and Mary dropped off a bag of tomatoes on their way out of town - tomatoes that needed to be picked from their garden and that they wouldn't be able to use since they would be gone for a week.

But, I need ideas for ways to use them. I don't like raw tomatoes, so I only buy them for a specific recipes, and usually that means one or two! I've got at least dozen - any ideas? Can you freeze tomoatoes?

  1. Kristy,

Too bad you don't like raw tomatoes, because there's a great, simple Hungarian tomato salad you can make with cubed tomatoes, a touch of vinegar, a little sugar, and some basil or oregano. Mmmmmmmm!

But, since you don't like them raw, why don't you boil them, remove the skins and make some spaghetti sauce which you can freeze and use later. Free. Cha-ching!

  2. I know you can freeze them whole in a zip lock bag for up to six months. I take mine out of the deep freeze and cook them asap, they do get mushy but make great sauce. You can also dry them for sun dried tomatoes. :) jen R
